Baby steps, y’all

Well, here I am, taking my first steps into the world of blogging. More specifically, food blogging. I was a kid whose cooking specialties were Stove Top stuffing, instant mashed potatoes, ramen… basically, anything that you just had to boil water to make and I was good!

It took moving halfway around the world to transform me into a chef, and one who could improvise with whatever ingredients were available. From being someone who had trouble with boiling water (pro tip: don’t heat the pot and THEN add the water. That’s actually the recipe for steam), I learned to trust my instincts, pick seasonal vegetables, and LOVE herbs and spices.

At first, I relied heavily on covering up any mistakes with lots of cheese. I stuck to comfort foods that didn’t need to be great to be enjoyable. I mean, even subpar mashed potatoes is pretty good!

Facing my late 30s, I’ve started applying my skills to adjusting recipes to be healthier, easier, and more flexible for other people to modify. Most of what I cook comes with several suggestions on how to tweak it, whether you’re gluten-free, vegan, or just trying to eat a little better.
